A great recipe


ENCHILADAS

Sauce
2 T. chili powder 1 ½ T. oil
¼ t. cumin 2 T. flour
¼ t. garlic salt 2 cans tomato sauce
1/3 t. whole oregano 1/8 t. pepper
2 ½ c. water 1 t. salt

Pour oil in sauce pan and add flour, mix until free from lumps. Add tomato sauce and water. Mix all seasonings and add. Cook until slightly thickened, about 5 minutes on medium heat. Set aside.


Filling
1 lb. cheddar cheese
1 medium onion, chopped
2 lbs. cooked ground beef or chopped chicken

Mix together in a large bowl.

Get flour tortillas and place a small amount of the filling on each one. Roll up and place in baking dish with rolled side down until dish is full. Pour sauce over enchiladas, covering each one. Bake at 350 degrees for 15 to 25 minutes.
